Skin-Healthy Cashew Butter Cookies

These cookies are super easy and quick to make. They will serve you well when you feel a sweet craving but don't want to sacrifice your skin - there is no flour, butter or refined sugar, i.e. the ingredients that can wreak havoc on your skin. Try them out with or without raisins, but let me know how you like them!

Cashew Butter Cookies (makes 12)

2 tbsp coconut palm sugar

1 cup cashew butter

1 tsp vanilla extract

1 large egg

1 tsp cinnamon

1/2 tsp baking soda

1/2 tsp salt

Preheat the oven to 175°C/350°F and line a baking tray with parchment paper.

Mix together the coconut palm sugar and the cashew butter in a bowl, making sure they are well combined. Measure in the vanilla extract and add the egg, again mixing until well combined. 

In a separate bowl, measure out the cinnamon, baking soda and salt and mix together. Add this mixture to the wet ingredients and mix together to form a smooth paste. Add raisins at this stage if using.

Form small balls (approx. 1 tbsp of dough) on the baking tray and lightly press the tops of the balls to flatten to avoid peaks burning in the oven. Bake for 8-10 minutes, and enjoy!

These can be stored in the refrigerator for 2-3 days, well-sealed.
